Jeremy Green, from Clyde in Central Otago, previously owned and operated Queenstown cafe The Tin Goose. Seven years ago he sold the business in pursuit of mastering the art of coffee roasting. “I started off as a barista and grew into the field of coffee roasting. It’s a natural progression I think.”
Since then Green has worked in Central America and Europe, most recently as a head roaster in Amsterdam, but he threw in the towel on that job after visiting Christchurch earlier this year.
“I came to Christchurch for a holiday in March and I thought this city is really cool. I was only here for three days, but in that time I signed up to this sight – it all happened pretty quickly. I flew back to Amsterdam packed up my stuff and came back.”
He moved to Christchurch with the same roasting machine he used in Amsterdam. It now takes pride of place in the cafe’s large road-front window. “We designed the cafe to have the machine on show for everyone to see. I want people to be able to watch the process, get amongst it and see what goes into making their coffee.”
The machine is not yet running due to consent issues, but Green is hopeful Unknown Chapter will be roasting its own beans within a month.
